This is a great
recipe to do with the kids, my two girls love doing this and they always
have clean plates! The bonus is – it’s healthy, you know what’s in it
and you won’t have Jamie Oliver beating your door down!!!
You will Need:

2 burger baps
2 cheese slices
Tomatoes
Cucumber
2 chicken breast
fillets
4-5 slices of bread
(crust removed)
Seasoning (salt,
pepper, paprika, herbs of your choice)
Olive oil for frying
1 egg
Clingfilm
Chopping board
Rolling pin
Method
The kids can get
involved at any stage you feel is appropriate.
First of all, use a
hand blender to reduce your bread to ‘crumbs’ and then season it with
herbs, salt, pepper and paprika (the seasoning is really down to your
own preference). I use a ‘salad sprinkle’ in this as it has a mixture of
dried herbs and garlic in it.
Next – whisk an egg
in a bowl and set to one side.
Wrap a chicken
breast very loosely in some cling film and then place it on the chopping
board. This is now when you and the kids vent all those frustrations by
whacking the hell out of it with the rolling pin!!! It will flatten and
spread out like an escalope (about 1cm thick)
Unwrap the fillet
and then dunk it into your egg mixture, shake off the excess (gently)
and then push it into the breadcrumbs. Turn it over to coat both sides
(it sometimes helps to use a bit of pressure to make the breadcrumb
mixture really stick).
Repeat with the
other fillet.
Heat the oil in a
frying pan and gently fry the chicken burgers, turning to brown both
sides. This will take about 15 – 20 mins on a low to medium heat.
Whilst the chicken
is cooking – prepare the baps. Slice the cucumber and tomato and place
in the bap with a cheese slice and sauce of your choice (I have mayo, my
eldest has ketchup and my youngest has burger sauce).
When the chicken is
cooked, cut it to fit the baps and put the excess on the plate as a
couple of chicken nuggets. You can serve it with some oven chips, but
it’s very filling on its own!!
