Pumpkin Penne with Seafood

INGREDIENTS:

  • 1 (500g) pack Penne Pasta (depending on your appetites)

  • 1 Small Pumpkin

  • 1 Small Packet of Smoked Salmon (Use Trimmings, Same flavour just cheaper)

  • Prawns and Mussels are optional (I like them though)

  • 2-3 cloves garlic

  • Plenty of Extra Virgin Olive oil (Don’t substitute)

  • Cherry Tomatoes

  • Some fresh Basil

  • Double Cream

DIRECTIONS:

Put 3-4 good lugs of olive oil into you pan and add your Garlic. Leave your garlic in big chunks, as it will stop it burning. Leave on a low heat.

Cut and de-seed your pumpkin. (No need to take too much time here, leave in approx. 1-inch size pieces). Add this to your pan and cook down until Pumpkin becomes soft.

Once the pumpkin has cooked to a soft texture put half of it into a blender with a handful of Cherry tomatoes, a dash of fresh cream and a good handful of Basil. Hit the button. (Season with salt and pepper to taste)

Leave this to one side and go back to your pan. You will be left with some nice chunks of soft Pumpkin. Add to this your smoked salmon and if available the prawns and Mussels. Cook for around 2-3 minutes and add the sauce you have prepared.

Leave all this to simmer while you prepare you pasta. I’m not going to give you instructions on this as you can read the packet

Once you pasta is cooked and drained stir in a little of your pumpkin and sauce just to coat.

Dish the pasta up into a nice sized bowl and spoon on top some of the beautiful Pumpkin, Salmon and seafood.

Tear up some nice crusty bread and open a bottle of chilled white wine
